Description: Fish peppers are an heirloom hot pepper from the Baltimore region by way of Haitian sailors who came after their revolution from France. They have green and white variegated leaves and the young peppers are also variegated until fully ripening to red. In fact some of the peppers are fully white which was popular for chefs to use in recipes where they didn’t want a red or green color to affect the look of the dish.
At one point they were rhetorical most popular peppers in fish houses and oyster houses in that region until coming close to extinction but for a relationship between a bee keeper named Ralph Weaver and black painter named Horace Pippin, who was trading heirloom seeds in exchange for bee stings on his hands as a form of arthritis treatment.
